I’ve been making my own natto for over 10 years now. I learned how from Natto Dad online. He’s great!
My starter is 1/9 of the size pack in your picture, make a really delicious ( to me!) natto which is VERY neba-neba (stringy) and tastes (to me) like roasted sunflower seeds.
I put the finished 2 cups of natto into ice cube trays, providing me with 36 one-ounce servings (which I eat daily).
You are 100% correct: it IS an acquired taste. But luckily, it works well for me!

Appreciate your article! Thanks!
Can you link your online recipe? I've tried making my own before but it was hit or miss so I gave up. Now I buy it at a Japanese Supermarket.
